Vankaya Pulusu Pachadi

This is my entry for JFI-eggplant hosted by sangeeta of ghar ka khana.
INGREDIENTS:
Brinjal...............large one,1
Onion..........1
Green chilly.....4
Ginger.......medium root
Salt..as per taste
Tamarind.........juice of a medium size ball
turmeric........1 pinch
For Tampering..
Garlic....1/2 the pod
urad dall........1 tbsp
gram dall.......1 tbsp
cumin seeds....1 tsp
mustard seeds....1 tsp
curry leaves......1 stalk

asaefotida.........a pinch
METHOD:
Turn it so that the whole brinjal can cook.
- When the brinjal cooked properly on every side ,take off from the stove and keep it in cool water.After it cooled remove the skin of it.
- Now chop the onion ,green chilly and ginger.Mix them with the brinjal.Add salt ,turmeric and tamarind juice.mix it well.
- Heat 2 tbsp of oil in a pan and fry the tamapering.
- Mix with the brinjal+tamarind mixture.
- Garnish with some coriander if u like.
serve with rice or chapathi.

I love this Pachadi Swapna,tastes great with Akki rottis.I bake the whole Eggplant in the oven to make it:)

Swapna, oh I am so going to enjoy this Jihva. Brinjal is a vegetable that I never liked as a child but my mom loves it. The way I like it is in a choka, roasted just as you have done on the stovetop with garlic and then mashed with chilies, roasted tomatoes and spring onions with salt to taste. Then I saw a recipe on on Trupti's blog that I tried and I like it that way now :) I am going to try your recipe and hopefully I will be able to say that I like brinjal this way too! :)

Swapna, your brinjal pulusu looks really tasty. I have tried cooking brinjal this way after roasting them on the stove top.

This is like a bharta it seems. We used to do it on stove top in India, but here I broil it
