Cream Cheese Spirals

This is a soft and yummy snack ( i can say).It contains mixed nuts, cinnamon and brown sugar filling in it.The aroma it gives is fantastic.I found this recipe in one of my friend's cookery book.

INGREDIENTS:
Cream cheese.......1 pack/225gm
Unsalted butter.....1 cup(2 sticks)at room temperature/225gm
All purpose flour/plain flour.....2cups/225gm
Sugar..........2 tbsp

1 egg white beaten with 1 tbsp of water for glazing.
Caster sugar for sprinkling.

FOR FILLING:
Brown sugar......1/2 cup/115gm
Finely chopped nuts(walnuts/cashew/almond/pistachio's)....1cup/115 gm
Ground cinnamon.......1tsp

METHOD:

  • Cream the butter ,cream cheese and sugar until soft.
  • Sift over the flour and mix until combined.
  • Gather into a ball and divide in half.Flatten each half ,wrap in grease proof paper and refrigerate for at least 30 min. or until firm.
  • Mix together the chopped walnuts ,the brown sugar and cinnamon and set aside.
  • Preheat a 375F/190C/gas5 oven.
  • Working with one half of the mixture at a time ,roll out thinly(not too thin and not thick)into a circle.

  • Trim the edges with a knife using a diner plate.

  • Brush the surface using the egg white glaze and then sprinkle half of the prepared filling evenly.

  • Cut the circles into quarters and each quarter into 4 sections.(just like triangles)
  • Starting from the base of the triangle roll up to form the spirals.

  • Sprinkle with caster sugar .

  • Bake until golden,15-20 min.

Notes: It will take some extra flour for rolling.don't worry. But try to avoid too much flour if not the spirals won't be soft.

I made this cake for our (5 th)anniversery last month.I made micro cake and did cream cheese frosting.

Cream cheese frosting:
Cream cheese.....1 pack/8 oz
Unsalted butter....1 cup/2 sticks
vanilla essence....1 tsp
warm milk.......2 tbsp
Powdered sugar/confectioners sugar....2 cups

mix all these until the required consistency occured. For the piping just mix 1/2 cup of unsalted butter and 1 1/2 cup of powdered sugar.
Enjoy the yummy yummy cake..

Don't know how I've missed your last couple of posts. Ajwain rice and the peanut chaat I must try especially. Hope the little one is having fun at school -- if she's having fun, mom can relax too :)
