Stuffed Capsicum


INGREDIENTS:
Capsicum........3 small ones.
Carrot..............4 medium sized
Salt..........as required
Cumin seeds............1 tsp
Green chilly........3
Coriander seeds...........2 tsp
Red chilly powder.......as per ur taste
Grated coconut............1 cup


METHOD:

  • Cut the top of the capsicum as shown in the picture.Remove the seeds in it and brush with salt.

  • Grind the green chilly and coriander seeds coarsely.
  • Heat 2 tbsp of oil in a pan.Add jeera.(cumin)When they crackle add the chopped carrot.
  • Cover and cook for sometime.Add salt ,ground green chilly and coriander seed mix.Add the capsicum seeds also.
  • Add red chilly powder as u required.
  • Cover and cook until the carrot pieces are well cooked.If needed add water.
  • When the carrots are well cooked add the grated coconut.Mix well and cook for 5 min.Remove from the stove.
  • Now stuff this carrot mix in the capsicum.Cover with the tops .

  • Now heat 1 tbsp of oil in a deep pan and put the stuffed capsicums in it.Cover and cook on a low flame until the capsicum are cooked.Or u can keep them in the oven also.Preheat the oven to 350F .keep the stuffed capsicum in a baking pan and keep in the oven for half and hour.


Enjoy with rice...

TIP:Here i haven't done any gravy for this curry.U can make the gravy also.The recipe for gravy is as follows...
  • Heat 2 tbsp of oil in a pan.Add 2 chopped onions.
  • When they fried add 2 chopped tomatoes.Cover and cook until the tomatoes became soft.
  • Add required salt and red chilly powder.If u want add 1 pinch of garam masala also.
  • Add this gravy to the cooked capsicum.

Hi Swapna.. those capsicum pots look lovely. I had a plastic one in India and this looks ditto like it. pictures are really tempting. never made this stuffed capsicum and really want to try it sometime. thanks for the recipe.
